Jamie Oliver’s Caponata
Going through a Jamie’s Italy phase at the mo. This is the thing with having a casual flick through a recipe book, you get sucked in to wanting to try every other recipe. Tonight we had caponata. I don’t know how authentic his version is, but if you like aubergine you’ll probably love this.
We ate it with fresh pasta, mozzarella and a rocket & tomato salad. However, I think this would work best alongside a bunch of other small dishes (fresh salads, meats, etc), eaten with some crusty bread and a nice glass of red.
